Health and nutrition are always top priority in my book, and I many of us are especially considerate of it during the current COVID-19 crisis, as everyone is worried about their immune system.

The great thing is that if you attend to your health and wellness consistently, not just in high need times your body will take care of you.  This is why it is so important to identify the specific diet that your body responds to and allows for you to maintain optimal health.

In today's episode I chat with Sophie Van Tiggelen from the blog, A Squirrel in the Kitchen.  She is an authority on the Autoimmune Protocol (AIP) who has authored several books on the subject and develops recipes specific for the protocol. She is a passionate foodie, recipe developer, author, and photographer. Diagnosed with Hashimoto's thyroiditis in 2009, she used the Autoimmune Protocol (AIP) to reverse her condition, and today, Sophie lives a full and vibrant life free from the anxiety and flare-ups that often accompany autoimmune diseases.

With her food and lifestyle blog, A Squirrel in the Kitchen, Sophie shares her AIP experience and empowers others to develop new habits to promote good health and wellness. Through years of experience, she has developed simple strategies to be successful on AIP, including numerous mouth-watering, allergen-free recipes that everyone (even those without autoimmune diseases) can enjoy. Sophie is on a mission to make the Autoimmune Protocol - and all that it encompasses - more accessible and sustainable for anyone looking for a more nutritious, more delicious, more health-conscious life.

During the episode she shares with us exactly who can benefit from an AIP diet, why you should consider eating this way, even if you have no know autoimmune issues and gives us a wealth of resources for you to dig into to learn more!
